Home made and to Die for…

    So Sunday I went to a produce store here in Edmonton (H&W) and they often have great specials on fruit or veg that need to be used in the next day or so. I was actually in there to grab supplies to make my pasta sauce for canning. It is a great recipe that has so many vegetables that no one can see!!! It is also quick and easy for when you need something fast. Any way I found a box of over ripe Banana’s for $5.00 and I just can’t turn that down so I scooped it up and loaded into my van and away I went over to moms to make sauce and salsa. After spending 4 hours making and prepping pasta sauce I came home and made 12 batches of banana bread! I also froze enough banana’s to make 21 more batches of Banana Bread! That should be enough to last us a while! In the past couple weeks I have also been busy making home made Jelly,  Jams, and apple sauce my pantry is very full of home made preserves! It so exciting for me to have so much home made stuff I love to have all natural products for my family! 

Banana Bread 

1 cup - Brown sugar 

4table spoons shortening/apple sauce

1 egg

1 1/2 cup flour 

1/2 teaspoon salt 

1 teaspoon baking soda 

1 teaspoon baking powder

3 very ripe banana’s Mashed

Mix all ingredients except banana’s and once you have a dry crumbly mixture then you add the bananas

Bake at 325 degrees for 60-70 minutes or until a tooth pick comes out clean  

Place on a cooling rack in the pan for about 5 minutes on its side then the other side for 5 more then it should have released from all sides and will be easy to remove from the pan! 

*This recipe can easily be doubled or even tripled if you have enough pans, I have 3 loaf pans, muffin tins, and small loaf pans. Each are different for length of time they take to cook. Muffins are about 20 -22 minutes, mini loaf pans are 35-40 minutes but always check the centre of the loaf/muffin to see if a tooth pick will come out clean!
